I'm going to be canonised. These are economical mid week meals for all the family.
Hotdogs and chips.
Pizza and chips.
Sausage and mash.
Spaghetti bolognaise.
Chilli con carne.
Cottage pie or Shepherd's pie.
Corned beef hash.
Roast chicken with potatoes and vegetables.
Irish stew or coddle.
Chicken korma or tikka massala.

These are other dishes to try: paella or arroz con pollo, colcannon, spaghetti carbonara (with cream), ravioli in sauce, spaghetti with meatballs and tomato sauce, quiche lorraine, lasagne.
I don't know why I have to post this. If you do not cook for your family, this is Protestant.
 
This is an economical recipe: sausage risotto.
I take the sausages out of the skins and fry them in a bit of oil or fat. I add a chopped onion, chopped pepper and risotto rice. Then I add chicken stock, a carton of passata, some dried basil and some frozen peas. It's better to add water and stir regularly until the risotto is soft. Make sure it doesn't stick to the bottom of the pan. It's nice served with grated cheese and garlic bread.
 
This is a very easy sauce for pasta like ravioli or tortelloni.

Cook the ravioli in boiling water, but not too long as they start to split.
I make a sauce using 2 cartons of passata and one carton of double cream. It's called a pink sauce. Heat it up in a sauce pan and add the cooked ravioli. It makes a lot of sauce.
 
This is how I make Dublin coddle. I boil bacon, sausages and minced beef in a large stockpot with onion and beef stock for about 1 hour and 15 minutes. The traditional recipe is just bacon and sausage, but my mum adds minced beef. Then I add peeled potatoes, and sliced carrots and cook them for about 30 to 45 minutes or until soft.

If you want to add more vegetables I suggest leeks / cabbage or peas. It's a bit like an Irish stew with bacon and sausage.
 
This is how I make paella.

I fry pieces of chicken breasts with slices of chorizo in a large pan. I'm not a massive fan of chorizo. It's only for flavouring. I add chopped onion, chopped pepper, and paella rice, Knorr chicken stock, a tin of tomatoes, frozen peas and frozen sweetcorn. It's better to add plenty of water as the rice soaks up the water. You need to stir regularly and make sure that it doesn't stick to the bottom of the pan. It is ready when the water is absorbed and the chicken is cooked. To be professional, you could add saffron or turmeric to give it a yellow colour, but Knorr chicken stock is also yellow.
 
This is a quick and easy recipe. Chicken fillets in a tortilla wrap with salad. You can buy fresh battered chicken fillets in the supermarket. Heat in the oven and serve in a wrap with salad, ketchup and mayonnaise.

My husband lived in Germany. He likes Bratwurst sausages, and also Bockwurst. You can grill or fry and serve in a hotdog. German sausages are still contaminated by Nazism. It's better to eat your own.

I am no professional cook, but I enjoy cooking and cook for myself. All these recipes that have been mentioned can have one thing added to them to give them something more. Hot Peppers.

Go online and see the many health benefits of hot peppers added to your diet. Add them to the degree of heat that you can enjoy. They do add to the flavor also.

If you are just starting with them, start with the Jalapeno. Fresh, not canned. Eventually you can work your way up to the habanero. But be careful with this one. They are very hot. Think about wearing plastic gloves when you are preparing them. Myself, that is as hot as I care to go.

Mix these with other sweet bell peppers of differnt colors, adds to anything you make.
